Vanilla Cupcake Recipe
Makes 12- 16 Cupcakes
Ingredients:
· 80g of unsalted Butter (lurpak) at room temperature
· 280g caster sugar
· 240g sifted plain flour 1tbsp baking powder
· 1/4 tsp salt
· 240ml whole Milk
· 1 tsp of Vanilla Extract
· 2 Large eggs
Method:
1. Set oven to 190 Celsius gas Mark 5, Line a muffin tin with cases.
2. using a hand held or free standing Mixer slowly mix together all your dry ingredients along with your Butter.
3. In a different bowl mix together you Eggs, Milk and Vanilla extract. With your Mixer still set on a slow speed add half of your Milk mix to your dry Mix. Mix well, once your ingredients are fully mixed together, add the rest of your Milk mix on a medium speed until your batter is smooth.
4. Spoon the batter into the cupcake cases about two-thirds full and pop in to the oven for around 18-20 Minutes. Your sponge should feel springy when you touch them. Leave them to cool before putting them onto a wire rack.
Vanilla Butter Cream Recipe
Decorates 12- 16 Cupcakes
Ingredients:
· 500g of sifted icing sugar
· 250g of soft unsalted butter
· A splash of whole Milk
· 1 tsp of Vanilla extract
Method:
1. Add your icing sugar and butter into a big bowl, whisk together on a low speed using an electric whisk or freestanding Mixer, mix well until you get a nice consistency.
2. Add your vanilla extract and a small splash of Milk then increase the speed on your mixer to High and whisk together until light and fluffy. This can take a few minutes.
If you wish to colour the buttercream add a small amount of paste colour to your Icing and mix together.
